Abstract: |
Animals are one source of enzymes, including carp (Cyrpinus carpio). Carp (Cyrpinus carpio) meat contains protease or proteolytic enzymes. Protease is an important enzyme and has high economic value because of its very wide application. This research aims to determine the enzyme activity of carp (Cyprinus carpio) meat on metal ions and the results of its purification by precipitation of ammonium sulfate. The research method was experimental, the parameters observed included testing the activity of crude protein extracts, testing the activity on metal ions, and testing the enzyme activity from precipitation results with ammonium sulfate. The results showed that proteolytic activity was not inhibited by EDTA and CaCl2. Protein from precipitation with ammonium sulfate, obtained the highest value, namely 33.978 mg. The purification stage that produces the highest total enzyme activity is obtained from the supernatant with an ammonium sulfate precipitation concentration of 80%. |
