Abstract: |
Bojong Salawe is one of the areas located on the coastline in Pangandaran regency. The availability of fishery resources in the area is so abundant that local people use it as a business. One of the fishery potentials found on the coast of Bojongsalawe is susuh clams (Sulcospira testudinaria). The purpose of this study is to analyze the business of susuh clam crackers starting from the stages of raw material procurement, processing, processingprocess technology, and marketing analysis. The methods used are surveys and data obtained from interviews and literature reviews to complete data and information. The results of the research obtained show that the raw material used by this industry is susuh clams or the Latin name Sulcospira testudinaria obtained from fishermen in Bojong Salawe and its availability depends on the season. The quality of raw materials does not have much effect on product quality, because this industry focuses more on the formulation of the dough used. This industry applies conventional technology in terms of processing, which is seen from the way of drying andhow it is made which is still done manually by humans. Susuh clam crackers are marketed online or in person sold face-to-face. |
